Tzatziki and lamb fillet (For 4 persons)
- 250g Natural yoghurt (can be replaced by vegan yogurt)
- 1 Clove of garlic
- Onion Sprouts
- Mint leaves
- Olive oil
- Juice of half lemon
- Salt / Pepper / Cayenne Pepper

For the tzatziki sauce, mix the yogurt with the garlic, some olive oil, the chopped mint leaves and season with the salt, the pepper and the cayenne pepper. Finish with the lemon juice. Let step aside for several hours so that the flavors can develop. Use a peeler to remove slices of the entire cucumber and keep them to make a salad.
Saute the lamb fillets in a hot pan and let them then rest in the oven at 175 ° C for about 5-7 minutes (depending on the size of the fillets). Meanwhile prepare the dish: Arrange the cucumber slices in the middle of your plate, add at the tzatziki sauce in the center of the salad and decorate with a few small mint leaves.
