Appearance is just the way in which we show to others what they want to see.
To be revealed, shows others what we really are.
Trying to give constantly the impression of something, is boring, therefore we should try to appear less, to be a little bit more ourselves.
Even if the strawberry claims to be a fruit, it just only seems like that … To see the true being of this fruit, we should take a closer look at… Only the little yellow seeds presenting a real fruit. Sometimes we spend more attention on appearance, but we forget to see the real essence and details.
Strawberry basil tart
- 120g Butter
- 15g Almond powder
- 80g Icing sugar
- 60g Whole eggs
- 1g Salt
- 250g Flour
Basil / Vanilla Cream
- 250g Liquid cream
- 50g Egg yolks
- 50g Sugar
- 12 Basil leaves
- 1 Vanilla bean
- 4g Gelatin
- Kitchen aid
- Pastry bags
- Pastry spouts
First start with the dough. In the bowl of your mixer knead the butter to make it smooth. Add the ingredients in the order, as shown above, until you get homogeneous dough, but do not mix it too much anyway! Then take your dough, form a ball, cover it with a plastic film and put it in the refrigerator for at least 3 hours.
In the meantime continue with basil cream. First soak the gelatin in cold water for at least 15 minutes. Then heat the cream and scraped vanilla in a saucepan. Add your basil leaves, slightly cut, in your cream, cover and let steep for 20 minutes. In another bowl mix the egg yolks and the sugar. After 20 minutes, warm the cream and sieve it over your egg yolks. Mix with a whisk, poor the preparation in your saucepan and put it on the fire again. Stir until it reaches 85°C. As soon as you have reached the desired temperature, add the drained gelatin. Mix it and poor the basil cream in a container before putting in the fridge. Let it cool for several hours.
After a few hours you can continue with the tart. Take the dough and roll it out to approximately 3mm and cut it the way you like it… You can cut circles, hearts; rectangles…however there’re no limits!
Then put your dough in the oven at 160°C and bake them for about 20 minutes. Let it cool down completely before using.
Now you can finish your tart!! For this whip your basil cream and add some mascarpone. Fill up your pastry bag, fitted with a spout, and garnish your tart. Decorate with your strawberries and some basil leaves… you’re done 😉
