The French toast was considered longtime as a dessert of the poor, but no longer today. With some imagination you can decline old bread in a thousand ways…
“Armer Ritter” with coconut and cerise
- Old bread (brioche, baguette, toast etc…)
- 300g Coconut milk
- 2 Egg yolks
- 50g Sugar
- 1 Vanilla bean
- Canned Cherries
- Coconut Powder
Mix the coconut milk with the sugar, the egg yolks and the vanilla. Cut the bread into pieces and let it soak in the coconut milk for at least 10 minutes. Preheat the oven at 175 ° C and sieve the cherries. Place the bread in a pot or a ovenproof mold and add the cherries. Fill the mold up with the remaining coconut cream and sprinkle the top with the coconut powder. Bake for about 45 minutes.
