Arancini and the leftovers
The Arancini is a culinary specialty from Sicily. Traditionally they are made with the leftovers of the risotto the day before, but using normal rice will be fine as well! Today, this recipe permits you to use the leftovers in your fridge. Do you have left some rice? Some cheese ends? Do you have old bread and maybe some tomatoes left? So you have everything to make a dish!!!
- Cooked rice
- Leftover cheese lurking in the fridge
- Some spices
- Vegetables (e.g., tomato)
- 1 piece of old bread
- 1 egg
- Oil for frying
First prepare a stuffing with some vegetables left in the kitchen. For this recipe we used some matured tomatoes, a small slice of chorizo leftover and a piece of feta, but you can also use a zucchini, mushrooms or anything else as well!!! Cut everything into small pieces and fry them in the pan. Season with some salt and pepper and let cool slightly.
Then prepare a quadrangle of plastic film. Put it on your board. With a tablespoon take some rice and spread it on the plastic wrap. Form a round and flatten it. Place in the center a little bit of the stuffing. Then take the ends of the plastic film and close it gently to form a ball (You can also use your hands for, but this way is much more comfortable). Then make your breadcrumbs, for this mix the old bread in a robot. Prepare two bowls – one with the breadcrumbs and the other with a beaten egg. Roll the rice ball first in egg, then in the breadcrumbs. Heat oil in a pan and dip the stuffed rice balls in hot oil. Let them fry for a few minutes. Take them out of the oil and place on paper towels to remove the fat. Season with salt and serve hot.
